California Stuffed Chicken Breast

 

4 boneless, skinless chicken breasts slice lengthwise (horizontal) to create a pocket, careful not to slice all the way through
100 grams fresh shrimp (or crab) meat
4-5 mushrooms diced finely
4-5 asparagus spears finely chopped
1 tsp. parsley
¼ tsp. oregano
¼ tsp. basil
pinch of cracked pepper & No Salt substitute
1 egg
¼ cup grated low fat romano cheese (optional)

 

1. place chicken breasts on baking sheet or broiler pan
2. stuff each breast with 2-4 tbsp. stuffing mixture
3. bake at 350 F for 20-25 min.
4. season with paprika
5. serve with steamed green beans and broccoli
