Sweet and Savory Spinach
Salad with Turkey |

1 pkg. pre-washed spinach leaves
½ turkey breast (organic) cooked and sliced ¼” thick
Bake turkey breast in oven 350 @ 30 min. or until juice runs clear when poked
with fork
Or buy cooked turkey breast (bear in mind when purchasing cooked turkey breast
the salt content will be greater
¼ cup dried cranberries
Zest from one orange
1 red pepper julienned
1 orange pepper julienned
½ red onion |

1. in large salad bowl toss spinach, red pepper, orange pepper,
and onion
2. place sliced turkey on top |

| Dressing
Juice from ½ orange
2 tbsp. Udo’s Oil
¼ cup vegetable bouillon (low sodium-fat free)
¼ tsp. cracked black pepper
2 tbsp. vinegar
2 tbsp. non-fat plain yogurt

1. in blender combine orange juice through yogurt-process till
creamy and smooth
2. pinch of stevia can be added if a sweeter vinaigrette is desired
3. drizzle over turkey salad
4. garnish with cranberries and orange zest
