Green Tuna Salad

 

2 celery stalks chopped fine
¼ cup red onion chopped fine
½ ripe avocado mashed
2 cans flake light tuna packed in water
1 tbsp. parsley, chopped fine
Pinch of dill
Pinch of cracked black pepper
1 dill pickle chopped fine
1 head romaine lettuce rinsed, drained, and chopped
1-2 tbsp. Udo’s Choice™ Oil Blend
2 tbsp. seasoned rice wine vinegar

 

- combine mashed avocado and tuna until well blended and creamy
- add Udo’s oil
- blend again
- add celery, red onion, parsley, dill, pepper, and pickles
- place romaine lettuce on serving platter
- top with tuna mixture
- drizzle with 1 tbsp. Udo’s oil, and 2 tbsp. rice wine vinegar
- garnish with parsley and sliced radishes
