Japanese Shrimp & Cucumber Salad

 

200 grams fresh shrimp meat
1 long English cucumber sliced finely
1 tsp. No Salt (salt substitute)
1 tsp. fresh lime juice
1 inch wasabi paste
3 green onions chopped fine
¾ cup julienned snow peas

1 garlic clove
¼ cup chopped roasted cashews (unsalted)
¼ cup seasoned rice wine vinegar (sushi vinegar)
¼ tsp. coarse ground pepper
Pinch of stevia

 

- Slice cucumber very fine and sprinkle with 1 tsp. No salt cover and refrigerate ½ hr
- in a medium mixing bowl combine green onions through stevia, exclude cashews
- rinse shrimp meat well, pat dry
- place in bowl with green onion mixture
- toss
- remove cucumber and rinse well with cold water
- drain
- place cucumbers on serving platter
- pour shrimp
- mixture over top
- garnish with cashews and cilantro
