Chicken Orzo Soup |

1 chicken, quartered (organic)
2 eggs, separated (free range)
1 cup orzo pasta (optional)
1 large carrot
1 large white onion
1 cup frozen peas
2 sweet potatoes diced, peeled |

- put chicken
in a large stock pot
- cover
with water
- add pinch
of No Salt (salt substitute)
- bring
to boil
- Cover
and simmer 3hrs.
- remove
chicken from pot to cool
- separate
meat from bones and skin (set aside)
- add vegetables
to stock pot

- simmer 20min or until vegetable are tender
- add orzo, cook for 5 min
- in a small mixing bowl, beat egg whites until foamy
- add yokes, beat until fluffy
- add 1 ladle full of broth to eggs beating constantly as to not
create lumps
- add 2 more ladles, beating constantly
- add egg mixture to stock pot stirring consistently
- replace chicken pieces to soup
- cover and simmer ½ hr
