Chicken Orzo Soup
 
1 chicken, quartered (organic)
2 eggs, separated (free range)
1 cup orzo pasta (optional)
1 large carrot
1 large white onion
1 cup frozen peas
2 sweet potatoes diced, peeled

 

  • put chicken in a large stock pot
  • cover with water
  • add pinch of No Salt (salt substitute)
  • bring to boil
  • Cover and simmer 3hrs.
  • remove chicken from pot to cool
  • separate meat from bones and skin (set aside)
  • add vegetables to stock pot
  • simmer 20min or until vegetable are tender
  • add orzo, cook for 5 min
  • in a small mixing bowl, beat egg whites until foamy
  • add yokes, beat until fluffy
  • add 1 ladle full of broth to eggs beating constantly as to not create lumps
  • add 2 more ladles, beating constantly
  • add egg mixture to stock pot stirring consistently
  • replace chicken pieces to soup
  • cover and simmer ½ hr
