California Club Lettuce Wraps
 
1 head butter lettuce
1 cup finely sliced red onion
¼ cup non-fat sour cream (optional)
1 avocado sliced
200 grams smoked non-fat turkey breast (sliced sandwich thick)
1 tbsp. light feta cheese
Sundried tomatoes (packed-no oil) chopped
½ cup boiling water

 

- Place sun dried tomatoes in boiling water
- Set aside until soft (approx. 20 min.)
- Wash butter lettuce leaves, pat dry and set aside
- In a small bowl, combine avocado, feta cheese, and chopped sundried tomatoes with ¼ cup non-fat sour cream

 

To make Lettuce Wraps

-On one leaf of butter lettuce first lay a few rings of red onion, and then lay 1-2 slices of smoked turkey
-In the center of turkey layer drop a tsp. of avocado mixture and spread over top layer
-Roll lettuce leaf starting from thick end to thin end
-Secure with toothpick
-Repeat with remaining ingredients
