- Sprinkle zucchini with ¼ tsp. salt (hallow center of
zucchini just enough to make a bowl but not to deep as to push
all the way
through) set aside 1 hr.
- combine cream cheese, dill, pepper and lemon zest with shredded
smoked salmon
- quickly rinse zucchini slices in cold water and pat
- dry with paper towel
- fill zucchini cups with cream cheese mixture
- garnish with parsley or fresh dill
